Water temperature
Choosing the right water temperature is crucial for preparing the perfect tea. It is advisable to cool the water before brewing in order to preserve the active ingredients and develop the full flavour of the tea. Too high a temperature can lead to bitterness and impair the flavour experience.
There are recommended temperature ranges for different types of tea. We recommend a water temperature of 60°C to 65°C for tea from the first picking, especially for high-quality green teas. Second and third picking teas and bancha develop their flavour best at temperatures between 65°C and 70°C.
Especially with premium green teas from the early first picking, cold infusions are also possible, in which the water is not heated to enable a gentler extraction of the flavours.
