Umami is the 5th flavour in addition to sweet, salty, sour and bitter. It refers to a particularly full-bodied, spicy flavour with a long aftertaste, which is often attributed to the taste of soy sauce as well as green tea.
The term originates from Japanese, but has now become established worldwide. The Japanese name is made up of the characters for 旨 = tasty and 味 = flavour/aroma
