Shincha
新茶
しんちゃ
Literally translated, shincha means 'new tea' and refers to the first plucking of the year from the first fine, aromatic leaves that sprout in spring.
When the first shoots sprout on the tea bush in spring, their development is followed with watchful eyes and great excitement. Although this development is not uniform among the various tea cultivars due to their different growth rates, it is significantly influenced by the prevailing weather conditions
For this first early picking, only the uppermost small, tender leaves are used, which contain the most flavour. Due to the longer growth phase in the cooler spring months, the plant produces particularly high levels of chlorophyll and the amino acid L-theanine, which gives tea from the early harvest a particularly intense, characteristically sweet flavour. Shincha is also usually dried a little less than other early-picked teas, which gives it a special freshness.
Attracted by the colourful flags announcing the arrival of the new tea harvest, queues of curious people form outside the tea shops at shincha time. As soon as the first early harvests arrive, the tea shops are bustling. Tea is sampled and many customers stock up on their annual requirements straight away. Most Japanese teas are blended from different batches and cultivars to ensure a reliably consistent quality - this means that the consistency, flavour and aroma remain largely stable over the years. Shincha, on the other hand, is always a seasonal tea and can develop very different flavours depending on the cultivar used, the processing, the growing region and the weather conditions.
For some years now, the KEIKO range has included various Shincha varieties from different growing regions of Kagoshima and different cultivars.
