Semi-shaded teas from the first early plucking period have an increased content of chlorophyll, carotenoids, theanine and other fine amino acids, which give the tea an aromatic sweetness and a fruity-green fragrance.
This characteristic flavour is technically known as "ooika", which is made up of the words 覆い = shade/covering and 香 = aroma.
