Matcha
Matcha is a finely powdered Japanese green tea that is whisked with hot water to make an energising drink.
To this day, this tea is still prepared as part of the Japanese tea ceremony. Due to its intensity and revitalising effect, matcha is also known as the "mocha" of green teas. It has a concentration-enhancing effect and, thanks to its richness in theanine, also ensures relaxation and well-being.

KEIKO matcha comes from the climatically favoured Kagoshima peninsula in the very south of Japan. The tea bushes grow there in small tea gardens on volcanic rock. Like chocolate, matcha has its own unique aroma and flavour, depending on the variety. At the Shimodozono company site in Diepholz, the matcha is freshly ground - a great advantage in the race against time, as the tea is very sensitive and begins to oxidise as soon as it comes into contact with oxygen. As the fine powder cannot be packaged under 100% vacuum, on-site production represents a considerable advantage in terms of freshness.
According to the traditional Japanese definition, only so-called full shade tea is used for real matcha. The leaves are dried and broken before milling so that the fine, lighter leaf tissue can be separated from the heavier leaf parts (stems, leaf ribs and veins) in a complex process using a draught. Only the flake-like leaf tissue (Japanese tencha) is used in the production of real matcha. Granite mills are used to grind the tea slowly and gently into the finest powder. This produces just 30g of matcha in one hour.
The term matcha is not protected, which means that simple green tea powder made from unshaded teas (funmatsucha) or semi-shaded teas (kabuse powder) is increasingly being sold as matcha.
