Black tea (literally translated as "red tea"). Unlike green tea, black tea is fermented, which gives it its characteristic reddish to brown colour.
In the classic cultivation areas for black tea, Camellia Sinensis Var. assamica plants are usually used. In Japan, however, black tea is produced from classic green tea varieties Camellia Sinensis Var. Sinensis by fermentation.
Most of the tea produced in Japan is drunk as unfermented green tea, so very few tea leaves are used to make black tea. The production of black tea accounts for only 0.13% of total tea production in Japan.
Japanese black tea is also known as wakoucha (和紅茶) - the "wa" stands for Japan.
