Genmai
玄米
げんまい
Used in relation to tea for roasted rice, sometimes also for puffed rice (in food, however, this usually refers to wholegrain rice).
Genmai can be added to any green tea in the pot before brewing, creating a roasted aroma in the tea that is reminiscent of the aroma of rice cakes.
Green tea that is mixed with roasted rice is called genmaicha. Matcha powder is often added to enhance the green color and aroma.
