Matcha Tiramisu
- 200g mascarpone
- 3 tbsp sugar
- 4 eggs (2 yolks, 4 whites)
- 2.5 tbsp matcha or kabuse powder
- 100ml hot water
- 50ml amaretto
- 12 lady fingers
- (1 tsp Genmai)
- Cream the mascarpone in a bowl, mixing in the sugar.
- Separate the eggs and beat the egg whites in a small bowl until stiff and stir into the mascarpone cream.
- Mix 2 tbsp green tea powder with the hot, no longer boiling water until smooth and add the amaretto and 2 egg yolks.
- Dice the ladyfingers and drizzle with the matcha mixture.
- To serve, layer the matcha-cookie-mix and mascarpone cream on top of each other.
- Chill for at least two hours and dust with the remaining matcha powder before serving.
- Garnish with green tea leaves, genmai rice or fruit as desired.
