Preparing Matcha & Tea Powders
In the traditional Japanese tea ceremony, matcha is dosed with a chashaku bamboo ladle and foamed with water in a matcha bowl (chawan) using a bamboo tea whisk (chasen). A more basic approach ist to use an electric milk frother - however, for lump-free enjoyment and a beautiful head of foam, we recommend traditional preparation with a matcha whisk.
Two methods of preparation
In everyday life, the light matcha (usucha) described below is most popular. This variant is also suitable for preparing other tea powders such as benifuuki powder, kabuse powder and mulberry leaf powder.
Concentrated matcha (koicha) is often prepared for special occasions. The less tannic, particularly high-quality traditional matcha varieties are suitable for its preparation. We recommend Matcha Supreme and Matcha Mantoku for this. Double the amount of tea while reducing the amount of water to produce a fragrant matcha with a thick consistency and dense foam.
Prepare
Briefly soak the matcha whisk in warm water to increase the elasticity of the bamboo and avoid broken ribs. Pass the matcha powder through a fine kitchen sieve.
Dose
Pour one or two spatulas or a small, levelled teaspoon (approx. 1 to 1.5 g) of matcha into the preheated, empty matcha bowl.
Tip: If you prefer not to sift, you can first mix a small sip of cold water with the powder to make a thick paste.
Whisk it up
Fill up with 70-100ml of approx. 80° hot water and whisk the tea with a matcha whisk using rapid hand movements (as if drawing an "M" in the cup) for approx. 20 seconds until a fine foam forms on the surface.
Enjoy
Before drinking the matcha the Japanese like to place a tea sweet on the tongue. The combination with the matcha becomes a wonderful flavour experience.
Storing your Matcha
Green tea powder is very sensitive. Matcha and kabuse powder should be stored cool - preferably in the fridge. After first opening, use the powder within 4 - 6 weeks if possible.
But: even if your matcha should have passed its prime - it will have lost aroma and some of its ingredients, but might still be used for Latte or baking.
Look - smell and taste - to check before throwing it out.
