With the Matcha Mantoku we have a true rarity of the tea world in our selection. It is slightly more fired than usual and therefore has a very complex taste with a warm, velvety and nut-like flavor. Intense but almost without bitterness. It is not only suitable for the light Matcha (Usucha), but, due to its mild aroma, also for the thick preparation (Koicha).

The tea plants from which Matcha is made are traditionally 90% shaded. The plants develop a lot of chlorophyll, theanine and caffeine, but slightly fewer bitter substances. After steaming & drying the tea leaves, the leaf tissue is separated from the leaf veins. The delicate, flake-like leaf tissue particles are called "Tencha" and are later very slowly ground into high-quality Matcha on traditional granite stone mills. In order to preserve the sensitive ingredients in the best possible way, we at KEIKO grind the Matcha on genuine Japanese granite stone mills directly at our location in Diepholz, fresh when required. Matcha preparation instructions

Matcha Zubereitung

Prepare

Place the matcha whisk briefly in warm water to increase the elasticity of the bamboo and avoid broken ribs. Pour the matcha powder through a fine kitchen sieve.

Dosing

Put one to two spatula tips or a small, level teaspoon (approx. 1 to 1.5 g) of matcha into the pre-warmed, empty matcha bowl.

Tip: If you prefer not to sift, you can first mix a small sip of cold water with the powder to form a thick paste.

Matcha Zubereitung

Frothing

Fill with 70-100ml of water at around 80° and use a matcha whisk to whisk the tea with quick hand movements (as if to draw an "M" in the cup) for around 20 seconds until a fine foam forms on the surface.

Ein hochwertiger und sehr leckerer Matcha. Schöne leuchtend grüne Tasse, ausgewogener Geschmack, wenig bis kaum bitter.

Wirklich smoother matcha, aber mir leider etwas zu herb. Wenig Süße. Hatte ich mir mehr von erhofft.

Mit viel Liebe

Bei KEIKO ist alles mit viel Liebe hergestellt. Das, finde ich, merkt man deutlich. Was könnte ich der treffenden Produktbeschreibung zum Matcha Mantoku noch hinzufügen? Vielleicht: Seit ich den Matcha von KEIKO probiert habe, schmecket der der Mitbewerber nicht mehr so gut wie vorher.

Moosgrünes Geschmackswunder

Neben dem 'Supreme' mein absoluter Favorit. Eine ausgewogene Mischung aus süß und herb. Samtig und dabei sehr kräftig. Ich liebe Dich Mantoku. :)

Perfekt

So stelle ich mir einen perfekten Matcha vor. Feinst gemahlenes Pulver, intensiv grüne Farbe, ein unverwechselbarer, angenehmer Duft, leichteste Verarbeitung zu einem vollmundig, weich und zugleich frischgrasig schmeckenden Grüntee.

Gut, aber auch nicht mehr

Ich bin etwas enttäuscht über den Geschmack des Matchas. Ich finde ihn relativ flach und wenig charakteristisch. Für einen Matcha in der Preiskategorie hätte ich deutlich mehr erwartet. Der Matcha löst sich zwar gut auf, aber insgesamt hat er keine so samtige und feine Textur wie erhofft. Der "Schaum" bleibt relativ großporig. Leider... Der Matcha ist immer noch gut, aber eben nichts besonderes.

Our feedback: Liebe Helen, es tut uns Leid, dass der Mantoku so enttäuschend war. Die fehlende Textur und der großporige Schaum verwundern uns etwas - wir würden dies gern überprüfen. Können Sie uns dazu das MHD auf Ihrer Packung nennen? Wie wurde der Matcha gelagert? Schöne Grüße vom KEIKO TEAm

Nicht ganz mein Geschmack

Das Matcha-Pulver hat Klümpchen, die auch beim intensiven "Schlagen" nicht verschwinden. Geschmacklich finde ich andere Matcha-Tees in der Kategorie von rund 30 Euro pro 30 Gramm besser. Ich bin ehrlich gesagt etwas enttäuscht, da mich die Beschreibung dieses Matcha-Tees doch dazu bewogen hat, ihn zu kaufen. Von anderen Keiko-Tees bin ich jedoch nach wie vor überzeugt.

Our feedback: Lieber Heinrich, vielen Dank für die Bewertung un die Rückmeldung zum Matcha Mantoku.Stetige Qualitätskontrollen im Produktionsprozess sowie Streichtests und Verkostungen nach jedem Mahlvorgang sollten eine konstante, möglichst feine Pulverqualität sicherstellen - doch bei einem Naturprodukt wie Tee und sensiblen Produktionsbedingungen wiebei Matcha spielen viele Faktoren eine Rolle und wir sind dankbar für jeden Hinweis zu Abweichungen von der gewohnten KEIKO Qualität. Wir sind in wenig überrascht über die Beschreibung der Klümpchen; ist es möglich, dass die Tüte vor der Zubereitung bereits geöffnet war und dabei Feuchtigkeit gezogen hat?Ansonsten könnten vielleicht folgende Tipps bei der Zubereitung helfen um die Klümpchen "klein zu kriegen":1. Den Matcha vor Verwendung durchsieben (jeweils nur die Menge die direkt verarbeitet wird)2. Der Mantoku Matcha ist einfach wunderbar. Jeden Morgen trinken mein Mann und ich als erstes jeder eine Schale. Schmeckt wunderbar, macht fit für den Tag.

Dan - Organic Japanese Green Tea
Dan (english:"warm") is a Kabusecha from the early first picking in April. The stronger firing during drying gives this harmonious tea a deep green cup and its warm, voluminous fragrance. The name of the tea derives from this unusual way of processing: "Warm". This tea impresses with a beguiling, velvety taste.Kabusecha Kabusecha is a green tea for which the tea plants are shaded, thus forming a high content of chlorophyll and other active ingredients and at the same time little bitter substances. Their characteristic "shade aroma" is called "ooika". Fukamushicha   Like many KEIKO teas, this is an intensively steamed tea (Fukamushi-cha, 100 - 120 seconds steaming time). Due to the gentle steaming process, the leaf pores open and the extracts from the tea leaf reach the water more easily and quickly. This can be recognized by the deep green tea colour in the cup and the yield of the tea - with top qualities up to 4 infusions are possible! Cold Brew       Intensively steamed early pickings are also particularly suitable for cold infusions (Mizudashi or Cold Brew). By infusing the leaves with cold water you will get an intensive and refreshing tea after only a few minutes. Matcha shaker
Matcha preparation doesn't have to be complicated, with this shaker the matcha is prepared perfectly and in seconds - even with cold water.The shaker consists of 2 chambers with a capacity of up to 70ml. The fine mesh separating the two chambers ensures a fine, dense foam when shaking, while the silicone ring ensures that nothing is spilt. How to use Pour matcha (approx. 1 heaped measuring spoon) into one of the containers and fill up to the mark with water or (plant-based) milk. Screw all three parts tightly together and then shake vigorously for about 30 seconds. Then unscrew the bottom container first and carefully turn the centre part and the top container upside down. Then unscrew the centre part and pour the matcha from both containers into a cup and enjoy! You can use the shaker to prepare all green tea powders, from benifuuki powder to kabuse powder and traditional matcha. Item No. 40226.1 Matcha measuring spoon (Chashaku) made of bamboo. Use 1-2 heaped spoons of Matcha (per 100ml) for one bowl of Usucha. The exact amount can vary depending on the type of Matcha and your personal taste, but you will quickly find the right amount of Matcha for your taste after a few tries. Start with a higher dosage and if it is too strong add some extra water and use less powder the next time. Make sure the spoon does not get wet, since the water will roughen the surface making the powder stick to it. Clean with a dry cloth instead.
