The tea cultivar Benifuuki is characterised by a particularly high content of catechins (EGCG and EGCG3) which are readily available to the body and for this reason it is often drunk in Japan for allergies such as hay fever.

Preparation

Benifuuki Powder can be whisked up with water using a Chasen, just like Matcha.

The catechins give this golden green powder a strong and astringent aroma, which makes it very economical in use. Already half the usual (Matcha-)dosage results in a finely fragrant tea. 

Aficionados like to drink it pure. For those who find the taste too tart, we recommend a mild dosage, a combination with mild mulberry leaf powder or the use as a supplement in drinks and food. Prepared with a little water and lemon and/or apple juice, it is, for example, a wonderfully refreshing drink.

Storage

In order to preserve the precious flavours and ingredients of the powder in the best possible way, we recommend to seal the bag well and store it in a cool and dark place, ideally in your refridgerator or freezer.

Matcha preparation instructions

Matcha Zubereitung

Prepare

Place the matcha whisk briefly in warm water to increase the elasticity of the bamboo and avoid broken ribs. Pour the matcha powder through a fine kitchen sieve.

Dosing

Put one to two spatula tips or a small, level teaspoon (approx. 1 to 1.5 g) of matcha into the pre-warmed, empty matcha bowl.

Tip: If you prefer not to sift, you can first mix a small sip of cold water with the powder to form a thick paste.

Frothing

Fill with 70-100ml of water at around 80° and use a matcha whisk to whisk the tea with quick hand movements (as if to draw an "M" in the cup) for around 20 seconds until a fine foam forms on the surface.

BenfukiNo. 1

Ich habe das Pulver das 1.Mal bestellt und muß sagen, daß ich sehr enttäuscht bin. Die Farbe des Pulver ist eher bräunlich-grau, ein grüner Farbton lässt sich nur erahnen. Aber am schlimmsten ist der Geruch der Flüssigkeit nach dem Aufschäumen, es riecht nicht annähernd nach grünen Tee, eher abstoßend, bei einer guten Schaumkrone... Ich bin sehr verwundert und ich frage mich ob das so sein muss und ob der Tee überhaupt trinkbar ist oder ich es lieber lassen sollte. Es tut mir leid so eine Bewertung schreiben zu müssen, da der Versand, die Verpackung und die anderen bestellten Artikel in einwandfreiem Zustand waren.

Our feedback: Benifuuki Pulver ist, wie auch in der Beschreibung erwähnt, eher golden/gelblich-grün, und hat nicht das leuchtende Frühlingsgrün von Matcha. Auch der Duft ist anders, wobei er natürlich nicht abstoßend sein sollte. Dies ist dem Benifuuki-Kultivar und der Verarbeitung geschuldet. Der Tee wird nicht beschattet und aus dem ganzen Blatt vermahlen. Da das Pulver im Geschmack sehr kräftig ist, empfehlen wir den Tee vor allem zu Beginn geringer zu dosieren als sonst bei Matcha üblich. Sollten Sie kein Freund der herberen Aromen und dennoch an der gesundheitlichen Wirkung interessiert sein, empfehlen wir eine Mischung mit dem natürlich süßen Maulbeerblattpulver oder den Matcha Benifuuki Chai. In dieser Kombi ist von den bitteren Aromen kaum etwas zu spüren. Sollten Sie dennoch der Meinung sein, mit dem Produkt stimmt etwas nicht, senden Sie uns bitte eine Mail an info@keiko.de, damit wir den Fall prüfen können.

Benifuuki Powder is my superstar

Just finished the 200g package and I can see its great effect on long covid for me. Within 2 months I am in much less pain (GI and headaches). Many thanks.

Spannender, herber Matcha

Ich habe das Benifuukipulver eigentlich wegen des hohen Gehalts an Catechinen (EGCG und EGCG3) gekauft in der Hoffnung, dass es meinen Heuschnupfen ein wenig lindern könnte. Heute habe ich die erste Tasse getrunken und ich bin angenehm überrascht über die Art der Bitterkeit. Diese empfinde ich als geschmackvoll und anregend, so dass ich die Tasse mit großer Freude getrunken habe. Ich hoffe, die weiteren Tassen geben mir die Gelegenheit, auch weitere Geschmacksnoten zu entdecken. Nach der Tasse fühlte ich mich sehr wach und voller Tatendrang, ich hoffe bis heute Abend werde ich wieder müde:D Über den Effekt auf meinen Heuschnupfen werde ich nachberichten. Ich bin noch nicht sehr erfahren in Matchas, bin aber begeistert von diesem Benifuuki. Ich konnte ihn auch gut aufschäumen, wenngleich es leider stillos mit dem Milchaufschäumer ist.

der tee ist von guter qualität

der tee entspricht meinen erwartungen.wem das zu bitter ist geringere dosierung. qualität ist gut ,schnell und einfach zubereiten.man fühlt sich wohl nach einer tasse.

Mit Heuschnufen vor und nach der Saison

Hallo Keiko Team, vor der Heuschnupfen Saison habe ich mit dem benifuki begonnen die Symtome sind viel geringer geworden. Nun im dritten Jahr trinke ich den Tee fast durchgehend, des Geschmackes und der Wirkung wegen. Mal schauen, wie sich das auf die nächste Heuschnupfen Saison auswirkt. Ansonsten ist Euer Service einwandfrei. Ob es einen besseren gibt, das kann ich nicht beruteilen, bin aber voll zufrieden mit dem Geschmack, der Wirkung und dem Preis. Es schmeckt nach Qualität

I tried Keiko's matcha first time. I already had an idea that the Keiko standards were high, but I still didn't have big expectations from the matcha itself. I was wrong. I was able to see the color difference, and taste the quality and distinct flavors of the matcha. In comparison to some matcha I bought from another store, for the similar price, the matcha from Keiko is superior. The team is super friendly and does everything to support you as customer. All in all, Keiko is a great experience.

Eine enorme Bereicherung

Ich trinke den Tee seit Herbst 2017 mit gelegentlichen Pausen und habe keinerlei Probleme mehr. Hilft mir insbesondere bei Problemen im orthopädischen Bereich. Also viel sitzen, einseitige Last, wenig Bewegung, Verspannungen und Schmerzen verschwinden wie durch ein Wunder. Habe auch schon diversen Bekannten den Tee empfohlen, bis hin zu meiner Physio und Massage und jeder ist begeistert. Als ob sich die gereizten Areale wieder regenerieren, es funktioniert. Auch Magen/Darm technisch übersäuere ich nicht wie bei Kaffee und es hält länger an. Über Geschmack streite ich nicht, wichtig ist die Wirkung.

dieser matcha ist einer der herberen sorten, der aber unglaublich wach macht und ganz gleich ob traditionell bereitet, mit milch oder kalt - er schmeckt einfach unendlich gut!

Guter Tee für Liebhaber

Der Tee ist sehr herb und daher nur etwas für Liebhaber des bitteren Geschmacks. Ich habe ihn gekauft, da ich Allergikerin und Asthmatikerin bin und gerne die Entzündungshemmende Wirkung ausprobieren möchte. Es geht mir auf jeden Fall gut mit dem Tee und ich habe viel Energie über den Tag verteilt. Leider lässt er sich nicht gut aufschäumen. Das geht immer erst wenn ich schon Mandelmilch hinzu gegeben habe. Vielleicht mache ich auch etwas falsch.

Our feedback: Liebe Laura, es freut uns, dass der Tee dir ein wenig Energie spenden kann. Was das Schäumen angeht: probier es vielleicht mal das Wasser erst nach und nach hinzu zu geben. Also beginnend mit einer glatten "Paste" das heiße Wasser (Temperaturhinweise beachten) schrittweise hinzu geben und zwischendurch schäumen - ein stärkerer Tee ist leichter aufzuschäumen. Mulberry Leaf Powder - Organic
The mild and sweet aroma of mulberry leaves has a relaxing and soothing effect. The color, especially in powder form, is similar to matcha tea with its fresh light green hue. In terms of taste, the powder is reminiscent of a mild matcha with the slightly nutty note of nettle tea. It is not for nothing that the powder of ground mulberry leaves is popularly used in Japan for caffeine-free "matcha lattes". This may be attributed to the fact that the mulberry leaves are steamed and processed just as gently as Japanese green tea, which also preserves the sensitive ingredients in the best possible way. Matcha whisk, light, size 80
Item No. 40115.1 The classic among the Matcha whisks (Chasen) in size 80. The handcrafted bamboo Matcha whisks are essential for creating the fine foam-top on your Matcha and making sure the powder dissolves without leaving lumps or a grainy texture. The finer the prongs of the whisk (indicated by a larger size) the better the results. For the easy preparation at home we recommend to first add only a small amount of water to the Matcha Powder and use the whisk to blend it to a smooth paste. Then add the rest of the water and whisk it up painting an M with the whisk with quick movements from the wrist. Matcha whisks are made from bamboo-sticks that are cut into fine prongs at the top and then bent into shape. The thicker the bamboo and the higher/sturdier the quality, the more prongs can be made, which is reflected in the different sizes (i.e. 80, 100, 120). Although the numbers traditionally refer to the amount of prongs, the width of the bamboo and the fineness of the prongs are actually more relevant to the size indications. Matcha shaker
Matcha preparation doesn't have to be complicated, with this shaker the matcha is prepared perfectly and in seconds - even with cold water.The shaker consists of 2 chambers with a capacity of up to 70ml. The fine mesh separating the two chambers ensures a fine, dense foam when shaking, while the silicone ring ensures that nothing is spilt. How to use Pour matcha (approx. 1 heaped measuring spoon) into one of the containers and fill up to the mark with water or (plant-based) milk. This Japanese green tea from the autumn picking is very tenderly fermented. It is made from the tea variety "Benifuuki". It is characterised by a high content of the special active ingredient epigallocatechin gallate (EGCG 3). The caffeine content of the autumn picking is comparatively low so that the tea is also suitable for the afternoon. The yellowish, clear cup has a milder aroma than the first two pickings with a gentle citrus note. The bitter constituents contained in the cup only become clearly apparent in taste when prepared strongly and infused for a long time. This Japanese green tea from the 2nd picking is very tenderly fermented. It is made from the tea variety "Benifuuki". This is characterized by a particularly high content of the special active ingredient epigallocatechin gallate 3 (EGCG 3), which reaches its peak similar to the caffeine content at the 2nd picking. The yellowish-green, clear cup has a slightly tart aroma with a floral note, which is particularly emphasized when the infusion time is shorter. The production and also the scent is similar to that of the Oolong tea. However, the freshly harvested leaves are not simply heated, but steamed for a short time while overheated. Furthermore, the partial fermentation does not take place in a warm environment as with Oolong, but in the dark at a low temperature! Only the further drying and pressing process corresponds to that of Oolong tea.
